About the bakery
Le Fournil de Sébastien has been a beloved fixture on Hilversum's Gijsbrecht van Amstelstraat since 2008, when French baker Sébastien Roturier and his wife Susan opened their doors. These days, it's a local institution, with queues often stretching outside every Saturday as customers stock up on freshly baked baguettes, flaky croissants, delicate pastries and the bakery's famous madeleines.
Originally from the Vendée region of France, Sébastien spent 11 years running three bakeries before moving to the Netherlands with his Dutch wife. He still bakes according to cherished family recipes, using traditional methods. His breads are naturally leavened with sourdough, made without unnecessary additives and given plenty of time to rise for maximum flavour. He even mills part of his own flour using traditional stone mills, creating bread with an authentic taste and texture.
